Paola will take you on a trip to Rome, sharing dishes from her grandmother’s kitchen. Proving that sophisticated flavors can be achieved with simple ingredients, she’ll whisk you away on your own Roman holiday. For a starter, you’ll learn to trim and prepare artichokes for Carciofi alla Romana, Braised Artichoke and Herb Bruschetta. Then Paola will make make Rigatoni alla Carbonara, a staple of Roman pasta traditions, seasoned with a Creamy Egg and Pecorino Romano Sauce and topped with crunchy Bacon.
With meat, dairy and eggs.
About the instructor: Paola grew up in Milan in a family devoted to making good food — her parents owned a gelato store for 20 years. She spent most of her life in the kitchen cooking with mama and nonna first, and later with her children. When she moved to Seattle, she started matching local ingredients with regional Italian cooking. She travels to Italy every year and visits restaurants and trattorias looking for inspiration.
