From crafting flaky pie dough to preparing mouthwatering fruit fillings, Kate will share her expertise to help you achieve pie perfection. Mastering pie dough is the focus of the class, and you will learn how to incorporate cheddar cheese, creating a crust that perfectly balances sweet and savory flavors. Wrap the subtly sweetened tart apples with the cheese-infused dough and behold the scrumptious creation that awaits.

About the instructor: KATE LEBO is the author of the cookbook Pie School: Lessons in Fruit, Flour, and Butter and the essay collection The Book of Difficult Fruit, which won the Washington State Book Award. She is also co-editor with Samuel Ligon of Pie & Whiskey: Writers Under the Influence of Butter and Booze. Her poems and essays have appeared in Best American Essays, Harper’s Magazine, Orion, Ecotone, The Inlander, and elsewhere. She lives and bakes in Spokane, Washington, where she is an apprenticed cheesemaker to Lora Lea Misterly of Quillisascut Farm.
