Inspired by the Jewish delis and bakeries of New York City, this class will focus on two iconic bakes: the Babka and the Black and White Cookie. In this class youll learn to how to make enriched dough and how to form the beautifully braided and layered Babka with ribbons of chocolate filling. You'll also learn the secrets to New Yorks iconic Black and White Cookies. These cookies have a cult following all of their own; once a way for bakers to use up extra cake batter, these tender cake-like cookies are now a reason to fly all the way to New York City. Youll learn the secrets to creating the distinctive vanilla and chocolate icing topping and the tender cookie base, and with luck, youll be able to quell your New York Deli nostalgia each time you bake a batch.

About the instructor: Heather has been a culinary instructor for many years, first in Southern California and now in the Pacific Northwest. Heather attended culinary school in California and has worked in fine dining restaurants and bakeries all over the world, including Sydney, Chicago and Los Angeles. She loves sharing her passion for food and how it brings people together. When Heather isn’t teaching she enjoys hiking, reading and boxing.
