In this special member-only class, you’ll learn all about one of our Northwest favorites: Salmon. You’ll begin the class with Chef Christa Demment González who will teach you her secrets for cooking salmon while showing you her two favorite preparations: Poaching and En Papillote. After the cooking demo, you’ll get a chance to taste both dishes while listening to Salmon Safe’s Program Manager, Brian Muegge. Brian will teach you all about Salmon Safe’s conservation efforts, and leave you with a greater understanding of how you can support salmon conservation right at home. Trust us, you’re going to walk away with a wealth of knowledge about salmon cookery and salmon conservation! Contains seafood and eggs.

More about Salmon Safe: Founded by river and native fish conservation organization Pacific Rivers in 1997 as an agricultural certification initiative Salmon Safe is now an independent Portland-based nonprofit that works collaboratively with more than 900 agricultural and urban landowners to promote watershed health. About the speaker: Brian leads Salmon-Safe’s agricultural and market access work as the Farm Program Manager. Brian manages Salmon-Safe’s agricultural program throughout the Pacific Northwest, largely working with farmers and place-based partners to further facilitate climate-resilient land stewardship practices.

About the instructor: Christa Demment González has taught and cooked in different roles around California, Maine, South Carolina and the Caribbean. With a Master’s degree in Nutrition from Bastyr San Diego and over 15 years of experience cooking in unique and challenging environments, she finds new ways to translate nutrition science into simple, mouth-watering recipes. She shares her nutrition knowledge through culinary medicine courses for healthcare professionals. Her enthusiasm encourages warm kitchen conversation and empowers participants to build their culinary confidence and recipe toolkit while exploring flavors and foods from around the world.
