Sharp knives make cooking so enjoyable; dont let your dull knives wait another day! Valley Sharp is owned by Darin Ganger, a 25-year veteran of restaurant kitchens who also teaches classes at PCC. We are excited to partner with Darin to bring his knife-sharpening services to our PCC community. Darin will set up shop in classrooms at PCC from 10am to 8pm for a few dates this Fall. Schedule your appointment in advance with Darin at a PCC near you.
About the instructor: Darin Gagner began his culinary adventure more than two decades ago as a way to get out of a small town in Eastern Washington and into the city. Seeking out as many experiences as possible and moving from coast to coast, he worked at lobster shacks, pizza joints, fine dining restaurants, and landmark hotels. Not a born teacher or cook, he
was lucky enough to work with outstanding chefs that helped him become both.
Darin is a full-time chef and owner of Valley Sharp Knife Sharpening. He lives in Cle Elum with his wife and sons. When he is not in the kitchen or his shop (which is rare) he’s in the woods or by a lake enjoying fresh air and craft beer.

- Sign-up is easy! Contact Darin directly to schedule your appointment by emailing darin@valleysharp.com. Drop-ins are also welcome.
- Standard sharpening rates are $12 per knife (add $3 for serrated). Standard sharpening is done on low RPM water wheels to preserve the temper of the steel and remove as little material as possible.
- High-end Japanese knives (single and double beveled) are done by hand on whetstones for $2.50/inch.
- PCC Members receive a 20% discount on the cost of sharpening.
