Description
Kofta, fried dumplings made from potatoes and variety of other ingredients, are a popular North Indian dish – and one that Shama adores. Cook along with Shama to prepare Malai Kofta, a vegetarian version made with potatoes and paneer cheese. You’ll learn to create authentic Indian flavors in your own kitchen, as you mix, form and fry kofta, and stir up a rich, creamy tomato sauce and Jeera Rice (rice pilaf with cumin) to complete the meal.
Vegetarian with dairy; no eggs or gluten.
About the instructor: Shama joined PCC after a 14-year tech career at Microsoft and a brief but wildly successful stint as food truck entrepreneur. Her truck, Roll OK Please, delighted locals with fresh paneer and kathi rolls and even received national recognition from Anthony Bourdain. Now she shares her passion for food and knowledge of regional Indian cuisine through cooking classes. Shama loves demystifying Indian culinary techniques, and showcasing the incredible diversity of dishes and flavors found in Indian cooking.
Class notes
This class is designed as a hands-on cook-along experience offered live via the Zoom app. Recipes, pre-class prep and an equipment list will be sent before class; after class, we will share a recorded version. One spot in class is good for one kitchen. Online classes are nonrefundable.
