Olive-Oil Thyme Bread

Ingredients

  • 4 eggs
  • 2/3 cup extra virgin olive oil
  • 3/4 cup sugar
  • 2 tablespoons chopped fresh thyme
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • Pinch of salt

Directions

Preheat oven to 350° F. Lightly oil and flour a loaf pan.

Whip eggs until glossy and light; add oil, sugar and thyme. Gently fold in flour, baking powder and salt.

Transfer batter to the prepared loaf pan and bake until a toothpick inserted into the center comes out clean, about 40 minutes. Cool in the pan for 10 minutes, then transfer to a rack to cool completely.

Special notes:

Serving suggestions: Slice and toast bread and serve with honey or jam, or cut bread into cubes and layer in a glass with fresh fruit and whipped cream for a parfait dessert.
