Ingredients
- 1 cup jasmine rice
 - 1 cup light coconut milk
 - 1 cup water
 - 1 teaspoon salt
 - 1/4 cup cilantro, finely minced
 
Directions
Combine rice, coconut milk, water and salt in a large saucepan. Bring to a boil, stirring once. Reduce the heat to very low, cover and simmer for 18 minutes, stirring once or twice during cooking.
Remove from the heat and let stand covered for 5 minutes, or until all the liquid is absorbed. Use a fork to fluff the rice and stir in cilantro.
