Ingredients
- 7 cups vegetable juice (regular or low-sodium)
- 3 cups diced tomatoes
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 1/2 cup lime juice
- 1/4 cup lemon juice
- 1/4 cup water
- 1 red onion, finely diced
- 1 red bell pepper, seeds removed and finely diced
- 1 green bell pepper, seeds removed and finely diced
- 1 cucumber, seeds removed and finely diced
- 1/2 cup diced celery
- 1 tablespoon minced garlic
- 1/2 bunch green onions, chopped
- 1/4 bunch cilantro, chopped
- 1 tablespoon dried tarragon
- Salt, to taste
- Dash of Tabasco
Directions
Combine all ingredients in a large glass or plastic container. Refrigerate overnight to allow flavors to blend. Serve cold!
