Ingredients

  • 7 cups vegetable juice (regular or low-sodium)
  • 3 cups diced tomatoes
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1/2 cup lime juice
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 red onion, finely diced
  • 1 red bell pepper, seeds removed and finely diced
  • 1 green bell pepper, seeds removed and finely diced
  • 1 cucumber, seeds removed and finely diced
  • 1/2 cup diced celery
  • 1 tablespoon minced garlic
  • 1/2 bunch green onions, chopped
  • 1/4 bunch cilantro, chopped
  • 1 tablespoon dried tarragon
  • Salt, to taste
  • Dash of Tabasco

Directions

Combine all ingredients in a large glass or plastic container. Refrigerate overnight to allow flavors to blend. Serve cold!
