Technically all of the “yam” dishes we prepare are made with sweet potatoes, which have a slower glycemic index than white potatoes. These colorful veggies are also a great source of potassium, beta carotene, and fiber. The carotenes in orange-colored vegetables like to be eaten with a little bit of fat for optimal absorption.Note:
