For kasha, saute 2 Tablespoons chopped onion and mushrooms in 1 teaspoon oil. Add 1 cup groats, 2 cups liquid and pinch of salt. Bring to a boil, reduce heat, simmer covered 10 minutes. Let rest for 5-10 minutes before serving. Fluff with a fork.
Yield: about 3/4 cup per 1/4 cup uncooked groats.
