PCC Natural Markets to Open Bothell Store on July 12

2016 News

Seattle – July 6, 2016 – If the way to your heart is through your stomach, Bothell, get ready to fall in love. PCC Natural Markets (PCC), the largest consumer-owned natural foods retailer in the U.S., today announced that the Bothell PCC will open on Tues, July 12, at 9 a.m.

The new store – PCC’s 11th and Bothell’s first co-op food market – will introduce two Bothell-exclusive programs to feed the community: a Rotisserie, featuring slow-roasted, sustainably-sourced meats prepared in-store; and, a food donation pilot whereby leftover prepared foods will be donated to several local nonprofit organizations. The Bothell PCC will also offer the area’s largest selection of organic foods.

“What sets PCC apart is our ability to stay true to the social and environmental values of our members while growing one of the best natural food markets in the country,” said Cate Hardy, PCC Natural Markets CEO. “We are constantly looking for ways to do better for our communities and enhance the experience for our shoppers. The Bothell PCC captures that pioneering spirit and sets a new bar for future PCC stores.”

Exclusive to the Bothell PCC is a Rotisserie, which was developed to meet the growing customer desire for nutritious, made-from-scratch offerings, particularly for lunch and dinner. The Rotisserie will feature meats that are brined, seasoned, rubbed and roasted every day in the Bothell PCC Kitchen. Meats offered will be sustainably raised and always include organic chickens and Non-GMO Project Verified porchetta, alongside a rotating menu of other offerings.

The Bothell PCC will also be home to the co-op’s second Taqueria. The original debuted at the Columbia City PCC last year, and both locations feature seasoned fillings like pork adobado, beef barbacoa, roasted squash and garbanzos, and chicken verde made with Non-GMO Project Verified chicken plus rice and beans, aguas frescas and freshly prepared salsas.

As with all PCC stores, everyone is welcome to shop the Bothell PCC’s full line of natural and organic grocery products, best-in-class produce (of which nearly 95 percent is organic) and full-service meat and seafood counters. Deli offerings will include tried-and-true favorites such as pizza, salad, soup, hot foods bar choices plus nutritious prepared foods and grab ‘n’ go deli items all made from scratch in the Bothell PCC Kitchen. In addition to grocery, the store offers an array of safe, effective health and body care products free from more than 500 ingredients common in mainstream items.

The unique co-op ownership model allows PCC to focus on environmental and social success as well as financial goals. As part of its social commitment, PCC partners with local food banks in each of the neighborhoods it serves to provide nutritious bulk food to local residents in need. With the opening of the Bothell PCC, Maltby Food Bank will become the 13th partner in the PCC Food Bank Program.

Additionally, PCC will introduce a pilot program at the Bothell PCC where it will team up with the Northshore Nourishing Network. While the co-op does its best to prepare the right amount of food each day, sometimes there are leftovers. To make sure these extras go where they’re most needed, PCC will donate prepared dishes from its hot foods bar, which will be stored safely and then shared during daily free meal programs. This new initiative allows the co-op to reduce food waste, while helping those in need of a hot meal.

The Bothell PCC, designed by VELOCIPEDE Architects Inc., was developed to be environmentally responsible and help reduce its carbon footprint. Eco-friendly design features include:

  • PCC’s fifth onsite WISErg Harvester that turns food waste into organic fertilizer.
  • An interconnected space heating, hot water heating and refrigeration system to enable re-use of the waste heat from refrigeration for other functions.
  • The use of recycled materials. For example, 100 percent of the demolished concrete block was recycled (a total of 42 tons not landfilled), and the store’s plumbing and refrigeration piping is made from 100 percent recycled copper.

The Bothell PCC is located at 22621 Bothell Everett Highway and will be run by a team of nearly 150 full- and part-time union employees, half of whom are from the Bothell area. PCC staff are also co-op members and able to vote for the PCC Board of Trustees and help shape the direction of the co-op.
