Bacon and Cheese Waffles

Ingredients

  • 1/2 cup warm water
  • 1 package dry yeast
  • 2 cups plus 2 tablespoons warm milk
  • 1/2 cup melted butter
  • 3/4 teaspoons salt
  • 1 teaspoon sugar
  • 2 cups all-purpose flour
  • 2 eggs, beaten
  • 1/4 teaspoon baking soda
  • 1 cup shredded cheddar cheese
  • 8 pieces bacon, cooked and crumbled

Directions

Place water in a large pitcher or bowl and sprinkle in yeast; let stand for 5 minutes. Add milk, butter, salt, sugar and flour to yeast mixture; whisk until smooth. Cover the container with a lid or plastic wrap and let stand overnight at room temperature.

Just before cooking, mix in eggs, baking soda, cheese and bacon. Pour batter onto a preheated waffle iron and cook according to directions until golden brown. Serve immediately or keep warm in a single layer in a 200° F oven until ready to eat.
