- 6 cups sweet cherries, pitted
- 1/2 cup plus 2 tablespoons brown sugar, divided
- 1 tablespoon cornstarch
- 1 teaspoon vanilla
- 1 tablespoon lemon juice
- 1 cup regular rolled oats
- 1/2 cup all-purpose flour
- Pinch of salt
- 1/8 teaspoon nutmeg (optional)
- 5 tablespoons butter, cut into cubes
- 1/2 cup sliced almonds
- Greek yogurt or ice cream, for serving (optional)
Directions
Preheat oven to 375° F.
Prepare the fruit filling by mixing the cherries, 2 tablespoons of brown sugar, cornstarch, vanilla, and lemon juice. Stir until the cherries are evenly coated.
Pour the cherry mixture into an 8-inch square baking dish and spread into an even layer.
In a separate bowl, prepare the crisp layer topping by combining oats, flour, the remaining 1/2 cup brown sugar, salt, and nutmeg (if using).
Add the butter cubes to the crisp layer topping. Use your hands or a pastry cutter to mix until the texture becomes crumbly and resembles coarse crumbs.
Evenly sprinkle the topping over the cherry filling. Lightly press it down so it holds together.
Bake for about 40 minutes, until the filling is bubbling, and the topping is golden brown.
Let cool slightly before serving. Serve warm with yogurt or ice cream if desired.
