Ingredients
- 2 to 4 tablespoons wine vinegar
- 1/2 teaspoon Dijon mustard
- 1/3 to 1/2 cup olive oil, or to taste
- 1 1/2 teaspoons minced fresh parsley leaves
- 1 1/2 teaspoons minced fresh chives
- 1 1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried
- 1 1/2 teaspoons minced fresh chervil or 1/2 teaspoon dried
- Salt and pepper, to taste
Directions
In a bowl, combine vinegar, mustard, salt and pepper. Add oil in a stream, whisking until it is emulsified. Stir in parsley, chives, tarragon and chervil.
